Yesterday’s food!

Good morning all! I slept 9 hours, and somehow, I’m still tired. This whole process is so draining.

So just a quick one with yesterday’s eats:

English muffin with PB and cranberries. I got this meal idea from Erin a long time back and I love it.

When she visited me this summer, I saw her put it together and eat it like this. I usually eat mine open faced, but I was in a hurry to get to work!

Lunch was leftovers, of course. Pumpkin Mac & Cheese again, but this time I mixed in the kale and melted more cheese over top. It was good and REALLY filling, so no afternoon snack yet again.

I am still having pain in my legs from the DOMS, and as it lightens, I am noticing my right knee being cranky. So I skipped another run and soaked in the Epsom salts some more last night. Looks like I’m going straight to the next long run this week. Boo. But I’d rather be healthy for it than push it.

For dinner I went to Oliver’s Market. It’s a cool grocery store here that’s a bit like Whole Foods, but cheaper. It’s also not ALL organic groceries, you can get normal boxed foods there too. And they have a salad bar and hot items and a really cool pre-made deli type thing. This is where I got my dinner items:

YUM. Let’s look at each one individually.

My salads. The one on the right is topped with a raspberry vinaigrette. I didn’t like the top left salad so I left that, and the falafel ball was really dry, so I didn’t eat that after one bite.

Butternut squash risotto cake. I heated it up and it was really nice!

This was called a “pumpkin drop” and it was the BEST DESSERT EVER. It was moist and delicious and so perfect and I never wanted it to end. LOVED IT.

And there you have it. I also did a small grocery shop, but I think you’ll laugh when you see what I got. I think I may have a problem:

Yup, ALL I bought was Greek yogurt. Fage is my favorite brand, but then I saw all these flavors of Chobani that I wanted to try! Expect to see a yogurt filled week!

Off to work!

LOL!!! That SO sounds like something I would do!

I have a problem with greek yogurt. If I don’t have at least two or three in my fridge waiting for me, I tend to get a little anxious.

I LOVE Fage…I just wish it weren’t so $$$. I think they sell Chobani at Costco? I need to look into that!
